Sourdough Granola Rounds

Need something to make with your sourdough discard? These granola rounds are simple to make, a combo of sweet and salty, and kid approved. They can also be made into bars if you prefer. You can substitute the olive oil for salted butter too. We have made them both ways (with olive oil and with a buttery spread). Watch the video below to learn how to make them!

Ingredients:

  • 1/4 cup organic extra virgin olive oil

  • 1/2 cup peanut butter (homemade)

  • 1/2 cup raw unfiltered local honey

  • 1/2 cup sourdough discard

  • 1 teaspoon organic vanilla extract

  • 3-4 cups organic oats

  • 1/2 cup dark chocolate chip morsels (Enjoy Life)

  • 1/2 coconut palm sugar*

  • sea salt (sprinkle on top after baking)

Directions:

  1. Preheat the oven to 350°F.

  2. Pour olive oil (or melted butter) into a mixing bowl.

  3. Melt the peanut butter and pour it into the mixing bowl with the oil.

  4. Add the honey, vanilla extract, and sourdough discard to the mixing bowl and stir with a metal spoon.

  5. Pour the oats and chocolate morsels into the mixing bowl and with a gloved hand mix all the ingredients together.

  6. Using a clean glove, oil a 12-cup muffin pan.

  7. Spoon the mixture into the muffin pan and with a piece of parchment paper, firmly press the mixture into each muffin cup to create a flat layer.

  8. Bake for 15-20 minutes at 350°F. Baking times may vary.

  9. After it has baked, sprinkle sea salt on top and let cool.

  10. Cover with press and seal or store in a covered container for 3-5 days.
