California Cashew Ranch Dressing

There are a lot of ranches in California!  Just a thought which may have inspired this recipe...Remember the previous post "25 Ways to use a Lemon?" If you think this recipe requires a lemon - you're right! This salad dressing is a healthy alternative to all you ranch dressing fans!

Ingredients:*
1  1/2 cups of organic raw cashews (soaked in water overnight in refrigerator)
3/4 cup of water
2 Tablespoons of freshly squeezed lemon juice
1 Tablespoon of apple cider vinegar
1/2-1 teaspoon of dried dillweed (depending on your personal taste for dill)
1 teaspoon mineral salt
1/2 teaspoon dried basil
1/2 teaspoon garlic powder
white and/or black ground pepper to taste

*using organic ingredients will minimize exposure to toxic chemicals sprayed on or used to preserve food and/or herbs and spices. Frontier Co-op is a good option for non-irradiated, non-GMO, non-EtO herbs/spices. Some health food stores carry these types of herbs/spices in bulk.

Directions:
Place all ingredients in a high powered blender (Cuisinart food processor works well) and blend until smooth.

Pour dressing into a salad dressing container.

Enjoy on salads, sandwiches/wraps, cauliflower pizza, fresh veggies, and more! Store in refrigerator for up to 1 week.
