Simply Salsa

Enjoy with fresh tortilla chips.

Ingredients:

3 large tomatoes πŸ…(cut into 4 slices)
1 white onion (cut into 6 slices)
2 t dried cilantro
1 t dried Mediterranean oregano
1 t ground cumin
2 T extra virgin olive oil
1/2 fresh squeezed lemon πŸ‹
1 t minced garlic
Himalayan pink sea salt (to taste)
Pepper (optional)

Preheat oven to 350ΒΊF. Place cut tomatoes and onion on cooking sheet and sprinkle cilantro over the top. Bake for 10-15 minutes until lightly roasted. Remove tomato and onion from oven and let stand for 5 minutes (or until cool). Combine cilantro, oregano, cumin, garlic, olive oil, lemon, sea salt into mixing bowl and add tomatoes and onion. Mix all the ingredients well. Pour ingredients into food processor and pulse or run on low for desired consistency.

Store in a glass container in the refrigerator for 30 minutes before serving.
